In addition, you can make smart Cook & Chill sessions, automatically combining the cooking cycles with +3°C blast chilling or -18°C freezing. This allows you to use the blast chiller even during the night, optimizing workflows.

  • Retard proving: manage your time at best by programming working cycles in advance and getting the product leavened at the desired time. Furthermore, you can efficiently cope with the variability of the demand by performing "just in time" cycles.

  • Thawing: regenerate food in complete safety, taking deep-frozen food from -20°C to +8°C without changing the original organoleptic properties.

  • Heated and cold storage: use the blast chiller even during the service to keep prepared dishes warm or cold. This way you can exploit 100% the space and optimize the preparation of your dishes.
